Chef Thia’s Okra Wrapped in Prosciutto
In Season 2, Episode 1 of Taste the Islands, Chef Thia creates a very simple but highly flavorful Okra Wrapped in Prosciutto appetizer. It’s made with 6 simple ingredients, then grilled to perfection. It’s one of her favorite finger foods. Enjoy!
- 6 whole okras
- 1/4 cup orange juice
- 3-4 slices of prosciutto
- 2 tbsp butter
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
Cut ends off of okra and split in half lengthwise. Place okra in a bowl and add orange juice, black pepper and salt. Toss to combine. Allow okra to marinate for 15-20 minutes.
While okra is marinating, slice prosciutto ham into 1 inch strips and wrap each okra half.
Using 2 wooden skewers, pierce two pieces of okra wrapped with prosciutto on the long side to create an “H” shape. Each skewer set should have 2-3 pieces of okra on it.
Set grill to medium, and brush with butter. Grill okra on one side for 3 minutes. Flip okra and grill for an additional 4-5 minutes or until okra is tender and bright green in color.
