The summer went by so quickly! We’ve enjoyed recipes made with tropical fruit, savory seafood, island herbs and all the culinary wiles of the Caribbean. Let’s count down your Top 10 Summer favorite Caribbean Recipes before we kick off the fall…

2. Chef Irie’s Jerk Pork Medallions

Try Chef Irie’s Jerk Pork Medallions with his Herb Apple Salad and a drizzle of mango chutney for a mix of spicy and sweet flavors. This is a great entree to throw on the grill if you love outdoor cooking, or like chef suggests if you don’t have an outdoor unit, get a grill pan and get your barbecue on inside your kitchen. Just make sure you have the fan on. It might get smoky in there.

3. Chef Irie’s Papaya Mango Slaw

The secret to maintaining a bit of crunch in this fruit based salad, is to incorporate the papaya and mango when they are slightly under-ripe. They should be starting to lose their green color, but not so ripe that when pressed, the flesh sinks in easily. The addition of mild peppers rounds out the tropical appeal. And of course the easy homemade vinaigrette brings it all together. Serve chilled or at room temperature alongside Chef Irie’s Herb Crusted Salmon in Tomato Basil Sauce.
