Saltfish is salted codfish which has been preserved by drying in salt. Before it can be eaten, salted cod must be re-hydrated and desalinated by soaking or boiling in fresh water. Saltfish makes up part of the national dish of Jamaica and is common fare throughout the Caribbean islands.
