This sweet and spicy blend combines both hot and mild peppers with pieces of pineapple, and is tossed in a light homemade vinaigrette. Serve it chilled alongside light, fresh entrees. Try it with Chef Irie’s Chicken Pelau from the “Carnival Nights” episode.

This salad is one of our favorites! Chayote is a very mildly flavored savory fruit. It must usually be cooked, but in this salad, the lime and sugar vinaigrette create exceptional flavor, while the mixture of the peppers and herbs offer the most amazing crunch and layers of awesomeness.

Thanks Joan. We’re working on season 2 right now. Really excited!
Very nice list and summarization of recipes. I see done really nice ones there I love though I like them all. Should make a list like that seasonal in summary.
We’ll keep it in mind Henry. Maybe one for the fall and winter season. Although summer is so much more fun! 😉
