Salads can get very boring, very fast. Lettuce and tomatoes can only be dressed so many ways, and they aren’t that healthy if they don’t actually get eaten, are they? But not so with these Caribbean Salads!

This week, let’s say goodbye to drab and dreary, and hello to these 3 not-so-boring island style salads that are sure to please your palette!

1. Chef Irie’s Pineapple Pepper Slaw

This sweet and spicy blend combines both hot and mild peppers with pieces of pineapple, and is tossed in a light homemade vinaigrette. Serve it chilled alongside light, fresh entrees. Try it with Chef Irie’s Chicken Pelau from the “Carnival Nights” episode.

2. Chef Irie’s Chayote Salad

This salad is one of our favorites! Chayote is a very mildly flavored savory fruit. It must usually be cooked, but in this salad, the lime and sugar vinaigrette create exceptional flavor, while the mixture of the peppers and herbs offer the most amazing crunch and layers of awesomeness.

3. Chef Irie’s Papaya Mango Slaw

The secret to maintaining a bit of crunch in this fruit based salad, is to incorporate the papaya and mango when they are slightly under-ripe. They should be starting to lose their green color, but not so ripe that when pressed, the flesh sinks in easily. The addition of mild peppers rounds out the tropical appeal. And of course the easy homemade vinaigrette brings it all together. Serve chilled or at room temperature alongside Chef Irie’s Herb Crusted Salmon in Tomato Basil Sauce.
