Puerto Rican Plantain Canoes – Canoas

Puerto Rican Plantain Canoas consists of sweet plantains carved to look like little canoes that are fried until golden, then filled with cheese and seasoned sauteed beef called picadillo, and baked for a melty, sweet and savory result.


INGREDIENTS

  • 8 ripe plantains
  • 1 1/2 lb. ground beef
  • Sofrito, to taste
  • 2 cloves garlic, mashed
  • 1 tsp Annatto seasoning
  • 1/4 cup tomato sauce
  • 1/2 cup water
  • 2 tbsp olives (pits removed)
  • Mozzarella or American Cheese
  • Oil, for frying

INSTRUCTIONS

  1. Add the beef to a large pot and cook over medium-low heat, stirring frequently, until fully cooked.
  2. Add the sofrito, garlic, and annatto, and continue to cook for a few minutes.
  3. Add the tomato sauce and water. Cover the pot and simmer for 15 minutes over medium-low heat.
  4. Peel the plantains. Cut the centers lengthwise in an oval shape without cutting through to the other side (so they look like little canoes).
  5. Heat oil in a cooking pan over medium heat. Add the plantain “canoes” and fry them until golden. Carefully remove them from the pan and place on paper towels to drain and cool.
  6. Preheat oven to 350 degrees Fahrenheit.
  7. Put the canoes in a baking pan and fill them with the meat. Sprinkle with cheese to cover.
  8. Bake 15-20 minutes, then serve hot with salad or rice.

NOTES

  • If you’re in a hurry, instead of baking the canoes at the end of the recipe, just microwave them long enough to melt the cheese.
