In America, it’s the other white meat, in Jamaica, it’s Trenton or Arnold. Whatever you call it, pork is arguably the sweetest meat there is, and in the Caribbean we serve it every which way. Some of the more interesting methods of pig preparation include roasting on a spit, baking underground, and jerking on dried pimento wood.
