Herb Apple Salad – Chef Irie

In his usual way, Chef Irie takes the idea of a boring salad and makes it magical with this mixed herb and gala apple combination.

Chef Irie’s Herb Apple Salad is a treat all on its own, but paired with Jerk Pork Medallions, as Chef would say it’s “dynamite”.


Serves 2

FOR THE SALAD

  • 2 cup diced gala apples
  • 1 tbsp lemon juice
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh parsley
  • 1/4 cup fresh mint leaves
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground coriander

FOR THE VINAIGRETTE

INSTRUCTIONS

  1. Wash, peel and dice apples and place into a bowl. Squeeze lemon juice onto diced apples to prevent browning.
  2. In a large bowl, combine chopped cilantro, mint, and parsley leaves. Sprinkle kosher salt, black pepper and ground coriander onto leaves.
  3. In a small bowl, combine tamarind chutney, canola oil, lime juice, salt, brown sugar, coriander and cinnamon. Whisk to combine.
  4. Pour vinaigrette over salad and toss to coat. Enjoy!
