In his usual way, Chef Irie takes the idea of a boring salad and makes it magical with this mixed herb and gala apple combination.
Chef Irie’s Herb Apple Salad is a treat all on its own, but paired with Jerk Pork Medallions, as Chef would say it’s “dynamite”.
Serves 2
FOR THE SALAD
- 2 cup diced gala apples
- 1 tbsp lemon juice
- 1/4 cup fresh cilantro
- 1/4 cup fresh parsley
- 1/4 cup fresh mint leaves
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp ground coriander
FOR THE VINAIGRETTE
- 3 tbsp tamarind chutney
- 1/4 cup canola oil
- 1 tbsp fresh lime juice
- 1/4 tsp kosher salt
- 5 tsp brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground coriander
- Wash, peel and dice apples and place into a bowl. Squeeze lemon juice onto diced apples to prevent browning.
- In a large bowl, combine chopped cilantro, mint, and parsley leaves. Sprinkle kosher salt, black pepper and ground coriander onto leaves.
- In a small bowl, combine tamarind chutney, canola oil, lime juice, salt, brown sugar, coriander and cinnamon. Whisk to combine.
- Pour vinaigrette over salad and toss to coat. Enjoy!
