Brown Stew Fish
Brown Stew Fish is a dish that bursts with flavor and is also quick and easy to throw together at home. Popular in Jamaica and throughout the islands, the dish features tender whole fish or fillets fried, then simmered in brown stew sauce with tomatoes, peppers, spices, and onions. It is traditionally served with rice and peas or ground provisions.
- 2lb snapper (or other firm white fish) fillets
- A splash lime juice
- 1 tsp salt
- 1 tsp pepper
- 1 onion, chopped
- 3 stalks scallion, chopped
- 1 scotch bonnet or other hot pepper, finely chopped
- 1 sweet pepper, chopped
- 3 cloves garlic, finely chopped
- 1/2 inch ginger, grated
- 3 tomatoes, chopped
- Oil, for frying
- 3 tbsp flour
- 3 sprigs fresh thyme (or 3 tsp. dried thyme)
- 1 tbsp butter
- 1 tbsp browning
- 2 tbsp soy sauce
- 2 cups water
- Mix the lime juice in a bowl with hot water and wash the fish in the mixture.
- Remove the fish from the water, pat dry, and rub with the salt and pepper. Allow to marinate for one hour.
- Mix the flour in 1/4 cup of water and set aside.
- Gently fry both sides of each fish fillet to seal the juices. Remove the fish and drain off the oil.
- Melt the butter in the saucepan and fry the onion, scallion, hot pepper, sweet pepper, garlic, tomatoes and thyme for three minutes.
- Add the water, soy sauce and browning and simmer for five minutes.
- Stir the flour and water mixture into the stew, then add the fish. Simmer for five minutes, occasionally stirring gently.
- Serve over rice and peas
