Haitian Akra fritters, or Accra, is an appetizer made of pureed malanga (coco), garlic, scallions, pepper, and herbs fried to golden perfection. Starchy and highly nutritious, malanga is fiber-rich root vegetable native to Central and South America. Try it as a snack or an appetizer.


INGREDIENTS

  • 1 lb malanga root, peeled and cut into small pieces
  • 1/2 green pepper, chopped
  • 2 scallions, chopped
  • 2 cloves garlic
  • 3 sprigs fresh thyme, leaves only
  • 2 tbsp fresh parsley, chopped
  • ¼ tsp ground black pepper
  • 1 tsp salt, or to taste
  • ½ scotch bonnet pepper, chopped
  • 2 cups vegetable oil, for frying

INSTRUCTIONS

  1. Blend all ingredients (except oil) until smooth.
  2. Refrigerate for 30 minutes to allow the flavors to blend.
  3. Preheat oil in a frying pan or deep fryer to 350 degrees.
  4. Scoop small amounts of the puree into the hot oil with a spoon. Fry for 5 to 8 minutes, until golden brown.
  5. Remove the akra and place on paper towels to drain and cool.
  6. Serve warm.
