5 Corn Recipes We Absolutely Love
Corn is one of those grains that grows in multiple climates so it’s available throughout the world and throughout the year for delicious corn recipes. In the Caribbean, we use the entire cob and kernels for soups and meals, but we’ve also got awesome ways to use grounded corn, or cornmeal, to make appetizers and sides. Take a look at these 5 super corny recipes you’ve probably never tried before.
1. Chef Irie’s Cilantro Corn Soup
This recipe by Chef Irie is a twist on the corn soup that is traditionally served in the twin islands of Trinidad and Tobago. Traditionally there, corn soup is served as an after-fete comfort food. In this recipe Chef incorporates the cob, the blended kernels, and the whole corn.
2. Festival
These elongated cornmeal fritters sweetened with a touch of brown sugar are served as a side dish or snack and are especially light and delicious when made by the fish vendors at Fort Clarence Beach in Jamaica. They are usually served along with a jerk protein or fried fish, but they taste great with any protein or even as a snack on their own. They’re also really easy to make with ingredients that you probably already have around the kitchen.
3. Cornmeal Porridge
Many islanders love this sweet and creamy dish enjoyed as a breakfast or dessert. The recipe varies from region to region with some incorporating butter and others, coconut milk. In the yummy base of cornmeal stirred to smoothness, condensed milk, nutmeg and cinnamon to spice it up make all the difference.
4. Corn and Black Bean Salsa
Salsa is the Latin word for sauce and it can range in texture from chunky to smooth. This recipe for corn and black bean salsa is served chunky along with tortilla chips or as a side. It is robust with a mix of hearty flavors and textures.
5. Coucou
In some Eastern Caribbean countries like Barbados, Antigua and the Virgin Islands (both US and British), coucou also called fungi, is a favorite cornmeal dish among the locals. It is served alongside corned beef, beef stew, callaloo or flying fish. Flying fish and Coucou together in fact comprise the national dish of Barbados.
