Jamaican Blue Drawers or Duckoonoo

Jamaican Blue Drawers or Duckunoo (pronounced doo-koo-noo) is a fairly rare traditional dessert made with mixed ground provisions and raisins. The simple ingredients are wrapped in banana leaves and steamed to become tender morsels. You’ll find this dessert, similar to Barbadian Conkies, in the more rural areas of the island more often than in the cities.


INGREDIENTS

  • 2 cups green banana
  • 1 cup boniatos (Caribbean Sweet Potatoes)
  • 1 cup coconut milk
  • 1 tsp baking powder
  • 1 cup brown sugar
  • ½ tsp salt
  • 1 cup flour
  • 1 tsp vanilla flavoring
  • 4 tbsp raisins
  • 2 tbsp cooking oil
  • Washed banana leaves cut into squares (or 4” x 6” Aluminum Foil Sheets)
  • Twine or Cord.

INSTRUCTIONS

  1. Peel and grate green bananas and boniatos.
  2. Mix bananas, boniatos, flour, baking powder, salt, and cooking oil in a large bowl.
  3. Warm the coconut milk in a saucepan on low heat, then add brown sugar and vanilla.
  4. Add the coconut milk mixture to the rest of the ingredients and mix until a batter is formed.
  5. Bring water to a boil in a large pot.
  6. Add four or five spoonfuls of batter to banana leaf square or aluminum sheet, wrap, then tie with twine. Repeat this process for the rest of the batter
  7. Add all the blue drawers to the pot of boiling water and cook for about 45 minutes.
  8. Remove from the boiling water and allow to cool to slightly warmer than room temperature.
  9. Remove from the wrappers and serve.
