Haitian Blanc Manger Dessert

A tropical version of an old French recipe, Blanc Manger is a sweet and creamy Haitian coconut custard dessert. It is very similar to Puerto Rican “tembleque” and can be topped with your favorite fruit cocktail or with whipped cream.


Serves 6

INGREDIENTS

  • 3 0.3-oz packets unflavored gelatin
  • 2 12-oz cans evaporated milk
  • Sugar to taste
  • 1/2 tsp cinnamon powder
  • 1 tsp pure vanilla extract
  • 1/4 tsp lime zest
  • 1 12-oz can coconut milk
  • 1 12-oz can fruit cocktail

INSTRUCTIONS

  1. Boil 3/4 cups of water, remove from heat, and stir in the packets of gelatin.
  2. Pour evaporated milk into a large saucepan and bring to a boil.
  3. Add the cinnamon powder, vanilla extract, lime zest, gelatin mixture, and coconut milk to the saucepan and stir.
  4. Drain fruit cocktail and add to saucepan then mix well.
  5. Taste and add more sugar if needed.
  6. Pour into a large bowl and refrigerate for at least a 6 hours prior to serving.

NOTES

  • For alternate presentation, pour mixture into individual serving dishes before chilling and garnish with fresh fruit.
