Coquito is a Puerto Rican beverage enjoyed throughout the holidays. This is a traditional preparation made spiced with cinnamon and Caribbean white rum.

Love eggnog but want something a little different this year? Try Coquito, a traditional Puerto Rican beverage similar to eggnog but spiked with Caribbean rum and mellowed down with the addition of creamy coconut. Mmmmm….

INGREDIENTS

  • 2 – 3 cinnamon sticks
  • 2 cups water
  • 12 oz. evaporated milk
  • 14 oz. condensed milk
  • 4 egg yolks
  • 15 oz. cream of coconut
  • 4 cups Caribbean white rum

INSTRUCTIONS

  1. Boil the cinnamon sticks in 2 cups of water
  2. When water turns yellow and has cinnamon taste, remove the sticks
  3. Temper the egg yolks by slowly pouring some of the hot cinnamon water into the egg yolks while mixing them
  4. Add evaporated milk, condensed milk and tempered egg yolks to the cinnamon water
  5. Simmer over low heat for a few minutes, stirring frequently
  6. Add the cream of coconut and the rum, stirring well
  7. Chill in refrigerator and enjoy.

NOTES

  • Tip: For a smoother consistency, use a whisk while cooking.
