Coffee Rum Cake

With a healthy dose of robust Blue Mountain Coffee and the added spirits in the decadent Butter Rum Sauce, this Coffee Rum Cake recipe certainly ain’t your grandma’s! Try this modern twist on a Caribbean classic for your next holiday party.


CAKE INGREDIENTS

  • 3 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted sweet cream butter
  • 2 cups sugar
  • 1/2 cup brown sugar firmly packed
  • 4 eggs
  • 1/4 cup dark Caribbean rum
  • 1 cup of brewed Blue Mountain coffee

RUM SAUCE INGREDIENTS

  • 1 cup unsalted sweet cream butter
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup dark Caribbean rum

FOR THE CAKE

  1. Heat oven to 325°F and grease 9″ bundt cake pan.
  2. Cream butter and sugar in large mixing bowl for about 2 minutes until fluffy.
  3. Mix in eggs, one at a time, them add rum and set aside.
  4. Sift together flour, baking powder, and salt in another bowl.
  5. Fold the flour mixture into the butter mixture and then mix in coffee until completely combined.
  6. Pour batter into the bundt pan.
  7. Bake about 90 minutes or until an inserted toothpick comes out dry. Let cool for 20 minutes before turning onto a platter.

FOR THE RUM SAUCE

  1. In a small saucepan combine butter, sugar, rum, and water over medium heat.
  2. Bring to a boil and simmer for 3-4 minutes stirring constantly to prevent burning
  3. Remove from heat and cool slightly
  4. Poke little holes into the cake with a toothpick.
  5. Spoon the syrup over the cake and let it soak in.
  6. Let cake cool to room temperature and pour any remaining sauce over the cake.
