Bistec de Palomilla is a Cuban dish of steak and sauteed onions- is there a better combination than that?! The meat is marinated to become tender and flavorful, then quickly pan-braised. Garlic and onions are simmered with the bits left in the pan, along with lime juice and left-over marinade, and then piled high over the steak. This is a dish that looks good, smells great, and tastes asombroso (amazing)! 


INGREDIENTS

  • 3 lbs. top quality Sirloin Steak, sliced very thinly
  • 10 cloves Garlic, minced
  • Juice of 2 Limes
  • 1 Yellow Onion, thinly sliced
  • Salt to taste
  • Coarsely ground Black Pepper to taste
  • 2-3 tbsp. Olive Oil
  • 3 tbsp. Fresh Parsley, chopped

INSTRUCTIONS

  1. Rub the steaks on both sides with about 2/3rds of the minced garlic. Squeeze the juice of one of the limes over the steaks, and season with salt and pepper to taste.
  2. Place the steaks in a plastic gallon bag. Add the sliced onion to the bag and seal closed. Refrigerate overnight or for at least for one hour.
  3. Remove the steaks from the marinade and pat dry. Set the onions aside. Reserve the marinade.
  4. Heat the olive oil in a large frying pan over medium-high heat. Add the steaks and fry quickly, about 1 minute per side. Remove steaks and place on a warm platter.
  5. Reduce the burner to medium heat. Squeeze the juice of the other lime into the pan and stir. Add the remaining marinade from the bag, the onions, and the remaining garlic. Saute, stirring occasionally, for about 5 minutes (the onions should still be crisp)
  6. Pour the onion mixture over the steaks on the platter. Garnish with chopped fresh parsley.
