Breadfruit Roll

In this recipe for a traditional Barbados Breadfruit Roll, a breadfruit “dough” is covered with juicy meat or fish filling that has been sauteed with onion, chives, and spices, then rolled up and baked. This appetizer is beautiful to look at as slices of the spiral-shaped savory pastry are fanned out on a serving platter. While most nations have some version of meat-filled pastry in their cuisine, including Irish Pasties, Russian Piroshkis, and Mexican Empanadas, the island of Barbados can certainly claim this as its own. 


FOR THE BREADFRUIT “DOUGH”

  • 1 beaten egg
  • 1 ½ tsp. salt
  • 1 large breadfruit
  • Water (for steaming) 

FOR THE FILLING

  • 1 lb cooked flaked fish or minced meat
  • 1 large onion
  • 2 blades chives
  • 1 celery stick
  • 1 red sweet pepper
  • 1 green sweet pepper
  • Salt & pepper, to taste
  • 2 tbsp flour
  • 1 tbsp margarine
  • ¼ cup milk 

FOR THE BREADFRUIT “DOUGH”

  1. Cook and crush breadfruit.
  2. Add beaten egg, and mix well. Roll into a ball.

FOR THE FILLING

  1. Melt margarine in pan over medium heat.
  2. Add chopped seasonings and saute for 2 minutes.
  3. Stir in flour and milk and and cook until smooth.
  4. Add fish or minced meat, taste and season. Allow to cool.

PUTTING IT TOGETHER

  1. Preheat oven to 350 degrees.
  2. Roll out dough ball on wax paper to form a large rectangle (16 x 16 inches).
  3. Spread on filling, reserving 1 inch at each side.
  4. Roll to form a log shape and place on greased cookie sheet. Brush with beaten egg.
  5. Bake until brown. Slice and serve.
