Haitian Blanc Manger Dessert
A tropical version of an old French recipe, Blanc Manger is a sweet and creamy Haitian coconut custard dessert. It is very similar to Puerto Rican “tembleque” and can be topped with your favorite fruit cocktail or with whipped cream.
Serves 6
- 3 0.3-oz packets unflavored gelatin
- 2 12-oz cans evaporated milk
- Sugar to taste
- 1/2 tsp cinnamon powder
- 1 tsp pure vanilla extract
- 1/4 tsp lime zest
- 1 12-oz can coconut milk
- 1 12-oz can fruit cocktail
- Boil 3/4 cups of water, remove from heat, and stir in the packets of gelatin.
- Pour evaporated milk into a large saucepan and bring to a boil.
- Add the cinnamon powder, vanilla extract, lime zest, gelatin mixture, and coconut milk to the saucepan and stir.
- Drain fruit cocktail and add to saucepan then mix well.
- Taste and add more sugar if needed.
- Pour into a large bowl and refrigerate for at least a 6 hours prior to serving.
- For alternate presentation, pour mixture into individual serving dishes before chilling and garnish with fresh fruit.
