4. Bammy

Often referred to as a Jamaican flat-bread, a bammy is made from grated cassava. Flattened discs are formed and are either toasted in the oven or pan-fried.  Bammy is easier to purchase at a local market, but we all know that just about anything home-made is fresher and tastier, so we encourage you to give this recipe a try! 5. Mackerel Rundown

You may have noticed that salted or pickled fish is a central ingredient in many Caribbean dishes, and this Jamaican breakfast is no exception.  The key to this morning delight however, is in the use of coconut milk that has been thoroughly reduced on the stove until thickened, otherwise known as “run down.”  Once the coconut milk is of the proper custard consistency, it is then combined with the mackerel and several vegetables, like onions and scotch bonnet peppers, to create a treasured and authentic Jamaican breakfast.
