Montuno / Cuban Sauteed Pork
Cuban Montuno, or Cuban Sautéed Pork, is a melt-in-your-mouth classic Cuban pork dish. The pork is slow-cooked in simmering water and spices for over an hour to achieve incredible tenderness, and then sliced and sautéed in olive oil with dry adobo spices, garlic, peppers, and you guessed it- lots of onions!
Serves 4
- 1 1/2 lbs pork meat
- 1 bay leaf
- 1 green pepper
- 2 bell peppers, chopped
- 1 large onion, whole, and 2 large onions, sliced
- 1 tsp salt
- 3 tsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp adobo seasoning
- Oregano, to taste
- Place pork in a large saucepan, cover with water, and bring to a simmer. Add bay leaf, green pepper, bell peppers, whole onion, and salt. Simmer one hour or until pork is tender.
- Strain out the pork and set aside to cool.
- Chop the pork into bite-sized cubes. Sautée in olive oil with oregano, sliced onions, garlic, and adobo seasoning until the onions are tender.
