Aruban Banana Na Binja
Plantains are typically starchy when unripe (or green) and sweet when ripe (yellow or turning black). In this Aruban Banana na Binja recipe that may be served as a side dish or a dessert, sweet, ripe plantains are bathed in brown sugar and wine, spiced with cinnamon and sauteed to delicious perfection.
- 2 extra ripe plantains
- 2-3 tbs butter
- 2-3 tbs dark brown sugar
- 2 tbs water
- 2-3 tbs port wine
- A dash of cinnamon
- Peel plantains and slice in half lengthwise.
- In a heavy skillet, melt butter and add plantain halves.
- Gently sauté and flip the plantains until they’re each golden on both sides.
- In a mixing bowl combine dark brown sugar, water, port wine, and cinnamon.
- Pour mixture over the plantain halves and simmer gently until the liquid becomes a thick syrup.
- Serve immediately.
