Jamaican Coconut drops are a traditional sweet snack made with chunks of dry coconut meat, sugar and lots of ginger.

Delicious coconut milk is made by grating and squeezing the pulp of dried coconuts. The flakes that we enjoy in macaroons and as garnish on our cakes are the grated pieces. Coconut drops are a way to use chunks of dried coconut meat rather than the flakes. They are a traditional Jamaican sweet snack made with coconut chunks, sugar and lots of ginger.


INGREDIENTS

  • 1 cup chopped ginger
  • 2 cups of brown sugar
  • 3 cups of chopped coconut chunks
  • 3 cups of water

INSTRUCTIONS

  1. Chop a quarter of a pound of pealed fresh ginger that has been cut into small pieces in a blender using the chop setting. Use only enough water to make the blender operate smoothly.
  2. In a large uncovered dutch oven mix one cup of this chopped ginger and water, 2 cups of brown sugar, 3 cups of firmly packed coconut chunks and 3 cups of water. Bring to a rapid boil and reduce the flame to medium.
  3. Allow the mixture to cook until it thickens then reduce the flame to medium low. Use a large spoon to continuously turn the mixture to prevent it from burning or sticking to the pot. The idea is to cook the mixture until the sugar begins to caramelize.
  4. When sugar begins to form at the bottom of the pot and it is difficult to turn the mixture with the spoon, reduce the flame to the lowest setting.
  5. Use a tablespoon to spoon the mixture and drop it onto the smooth side of aluminum foil or into a baking pan. Allow to cool.
  6. Remove the mounds of cooled, dried coconut and enjoy!
