Kabritu Stoba / Bonaire Goat Stew (Courtesy @sabina_flower | Instagram)
In Bonaire, Kabritu Stoba is considered a specialty dish which usually features cubed goat meat, but lamb can also be used. This is a rich stew made with onions, garlic, tomatoes, and jalapenos, which is perfectly finished off with a splash of lime, and a touch of vinegar. This stoba is thick and hardy, and is usually served with a side dish of Caribbean rice and beans.
- 2 lbs goat or lamb, cubed
- Juice of 1 lime
- 3 tbsp butter
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 medium tomato, chopped
- 1 can tomato paste
- 1 medium jalapeno, chopped
- ½ tsp paprika
- 1 cup beef broth
- 1 tbsp white vinegar
- Salt to taste
- Black pepper to taste
- Preheat oven to 350 degrees F.
- Pour the lime juice over the meat.
- In a large pan, melt the butter and then add the meat. Sauté, stirring occasionally, until browned on all sides.
- Add the onion and garlic and continue to sauté for 5 more minutes. Add all of the remaining ingredients and simmer for an additional 5 minutes.
- Transfer to a baking dish. Cover and bake for 45 minutes.
- Serve with rice or fungi.

Thank you so much for the quick reply, I will try this posted recipe for Goat Curry, but when I watched Chef Irie, he listed all the ingredients in the curry, and used lime juice in an overnight marinade. I can look for a store bought curry I am guessing, and hope for a Jamaican style curry.
