Barbadian Pickled Cucumber
This simple recipe for Barbadian Pickled Cucumber is zesty, light, refreshing, and makes a great side. Goes especially well with a heavy main dish that needs lime juice to brighten up the flavors.
- 4 cucumbers (local or English)
- 1/4 medium onion, minced finely
- Juice of 3 limes
- 1 1/2 tsp. sea salt
- 1/2 scotch bonnet pepper, minced finely
- 1 small bunch parsley, chopped
- Peel cucumbers and slice thinly.
- Add all other ingredients and mix well.
