2. Escoveitch Fish

Escoveitch fish is enjoyed by the people of Jamaica year round, but is specially served on Good Friday as part of the Easter tradition. This version of the spicy fish dish is made with whole, fresh red snapper slathered in Escoveitch sauce, which consists of carrots, onions, peppers and pimento soaked in vinegar and various spices.
