Cassava Yucca

Cassava, or yucca, is a root vegetable native to South America that is cultivated year round throughout the developing world. It is the third most consumed carbohydrate in the tropics, after rice and corn. Tapioca is a by product of this root. Cassava may be peeled and boiled on its own as a side, or fried, mashed and baked into other delicious sides and meals.
