Chef Irie
Hugh A. Sinclair is better known as Chef Irie. Currently a South Florida resident, Chef Irie is originally from the island of Jamaica. He is a professionally certified personal chef and caterer with a passion for amazing food and great service.
Our chef, and host of Seasons 1 and 2 of “Taste the Islands”, has an interesting history. He earned a Bachelor of Arts degree in Architecture from the University of Florida in Gainesville. Then he switched focus to earn an Associate’s degree in the Culinary Arts from Johnson & Wales University in North Miami.
He has worked at some of South Florida’s premier establishments including Turnberry Isle Resort, Charlie’s Crab, Cascades and Bimini Boatyard. At these outlets, he gained valuable professional experience in cuisine far beyond that reflecting his Caribbean upbringing. Today he fuses the influence of the islands with the influence of his travels through Europe and the Far East. His audience can see his palpable love for learning about cuisine from around the world. Stay tuned for him and his new co-hosts, Haitian Chef Thia and island explorer Lisa Lee in the upcoming 2017 season starting in June on Create TV and on PBS stations around the country.

New to your show and love it!! Saw Judy’s post on May 8th and I would, also, like the recipe for corn soup and the stew that you made on a show, May 7th, on channel 2, Florida channel. Also, the slaw made with parsley in it and the salmon recipe, that is finished in the oven and then you put a tomato based ingredients on it. You had a pretty girl on and you sat down and had baked scrambled eggs(fritatta?) which I would like that recipe, too. The last 3 recipes are from the same show this first week in June(saw that on a North Carolina channel).

I have really enjoyed the show. I am also interested in a couple of the recipes. Especially the chicken pelau recipe as well as the corn soup. i hope you sill be continuing to add the recipes.

I wished I was there with Chef and his friends as they enjoyed the spicy fish dish with Star fruit. Everyone seemed to have a grand time… the energy was good.

Any firm white fish can be used, but in Jamaica the snapper is always the fish of choice. In the US, tilapia or flounder may be easier to find and more cost effective.

Hello, I was searching http://www.createtv.com for the time slot for Martha Bakes and stumbled upon your show and bio. I cannot believe that I had never heard of you or your show before. I decided to give it a try until I saw the time slot! In Cincinnati (SW Ohio), you are on at 1am, 7am, and 1pm. Those are NOT prime TV times because most people are at work during those times. Side note, there are over 80 cooking shows and/or specials listed on the create tv roster. You are the only black person shown. I will be writing them as well as my local PBS station a letter (WCET-Cincinnati).
I am going to set my alarm for 7am because I am really excited to see your show especially after reading all of these great, positive comments.

I was flipping through the TV channels one Sunday and happened to see your show. just before that I had plans to write to PBS Create and ask the reasons Caribbean food was not part of the line up for TV-Create. Now everything is OK! Chef, your personality and apparent love for food, its preparation and presentation – creations for your guests and viewers is so rewarding and enjoyable. I wish you and your staff all the best for your new show. One request PLEASE! Would you give us your recipe for JAMAICAN BEEF PATTIES and BLACK CAKE???? Before I leave this earth, I’d like to prepare these 2 of my favorites. Thank you very much, Chef.

We may not make the patties and black cake on the show, but you should be able to find the recipes on the website in the coming months. Stay tuned for season 2 hopefully coming later this year!

Hubby put on WVIZ been hooked on you all day. Got the app and looking forward to making your recipes. Been to Jamaica 5 times and watching Taste the Islands we ate planning our sixth visit after a ten year gap. Love all you do!! I want to cook in the pans you have, love red, they look like cast iron? Your the best!! Can’t wait to make your recipes.
Thanks Ruth and we do highly recommend you visit Jamaica again as soon and as often as possible :-). The red pans are actually ceramic. They’re really pretty and have great non-stick properties. They work in the oven too. Enjoy the recipes and your trip!
Where can I purchase the dinner plates that Chef Irie uses on his show? They are black and white.
