Steamed Cabbage and Saltfish

Steamed Cabbage and Saltfish is a quick and easy breakfast that is sure to please. While the saltfish alone packs plenty of savory flavor, this dish is brought to life by the sautéed onion, garlic, pepper and thyme. A quick simmer with fresh cabbage, and breakfast is served!  


INGREDIENTS

  • 1 medium cabbage, chopped
  • 1/2 lb salted codfish (saltfish)
  • 2 tbsp margarine
  • 1 scotch bonnet pepper
  • 2 sprigs fresh thyme
  • 1 clove garlic, crushed (or 2 tsp. garlic powder)
  • 2-3 small slices sweet green pepper
  • 1 medium onion, chopped (or 2 tbsp. onion powder)
  • Black pepper, to taste
  • Salt, to taste
  • 1/4 cup water

INSTRUCTIONS

  1. Soak saltfish in water to remove some of the salt, or boil for 5-7 minutes.
  2. Break up the saltfish into small pieces.
  3. Sauté the saltfish in margarine with the onion, garlic, sweet pepper, and thyme.
  4. Add the cabbage and water; stir. Cover saucepan and cook until cabbage is tender.
  5. Add whole (uncut) scotch bonnet pepper and sprinkle with black pepper and salt. Simmer for a few more minutes.
  6. Serve hot, with fried breadfruit and plantains.

NOTES

  • If you can’t find codfish, or if you prefer not to deal with the bones, try salted bacalao or pollock.
  • For extra spicy Cabbage and Saltfish, finely dice the scotch bonnet pepper excluding the seeds which may make the dish too spicy. Remember not to touch your eyes when cooking with scotch bonnets. Habaneros may be milder in flavor.
