A few simple ingredients you probably already have in your fridge and you’re off to the tropics with this refreshing combination of orange, pineapple and rum.
Sweet and strong, even without any rum, this 2 for 1 Pineapple Ginger Cocktail recipe combines a homemade, flavored simple syrup that you’ll love to use in other cocktails, and some simple ingredients to make this libation the Irie way.
Serves 4
FOR THE PINEAPPLE GINGER SIMPLE SYRUP
- 2 1/2 cups water
- 2 cup granulated sugar
- 1 to 2 inch piece of fresh ginger
- Fresh pineapple skin
FOR THE LIBATION
- 1 cup pineapple-ginger simple syrup
- 3/4 cup dark jamaican rum
- 1 cup orange juice
- 2 tbsp fresh lime juice
- Granulated sugar for garnish
- Lime slices
- Lime zest
- Combine fresh ginger and 1/2 cup water and pineapple skin in blender. Blend on high speed until smooth.
- Using cheesecloth or a fine sieve, strain blended solids out and keep the liquid. Set aside.
- In medium saucepan, add pineapple skins and sugar to 2 cups water and heat until sugar dissolves. Remove from heat and allow to cool.
- When simple syrup has cooled, strain out pineapple skins, add to ginger liquid and stir to combine. Store in a clean glass jar in the refrigerator.
- Place a few cubes of ice in a shaker, add lime juice, orange juice, pineapple ginger simple syrup and Dark Caribbean Rum.
- Place cap on shaker and shake for 30 seconds.
- Run a slice of lime on the rim of serving glass, then dip rims into sugar.
- Pour Ginger Rum Libation into glasses and garnish with lime zest and slices. Enjoy!

Chef Irie is charming, handsome and very familiar with how Caribbean foods slightly different island to island.
I also appreciate his co-hostess’s explanations of each dish. She really makes the viewer want to either try and make the dish, or find a Caribbean restaurant and try it in person.
This is real diversity.
