Taste the Islands
Season 2
Taste the Islands is a half-hour cooking series featuring delightfully exotic, deliciously accessible Caribbean fare. The eight part second season features Season 1 culinary host Hugh “Chef Irie” Sinclair, along with new cohorts Haitian Cynthia “Chef Thia” Verna and island explorer “Lisa Lee” Arneaud.
Each episode includes one or both chefs creating island-themed dishes. Culinary travel stories explore the inviting mystique of the season’s host island, Barbados. Viewers will also get a glimpse of life in Jamaica and Haiti through the eyes of the chefs who grew up there.
Season 1
In each episode of Taste the Islands with Chef Irie, our chef is challenged by his friend the foodie Nicole to create a mouthwatering meal using specific Caribbean ingredients or cooking methods. Chef Irie elevates the ingredients to the level of world class cuisine he is best known for, creating stunning presentations that excite the senses. Along the way viewers get to listen in on conversations with his Caribbean celebrity clients. Throughout the program, short vignettes also educate viewers about Caribbean food culture, and about Chef Irie’s love and knowledge of foods from the Caribbean and elsewhere in the world.

101. THE LATIN LOVER
Chef Irie brings out his inner Latin lover, preparing citrus infused Snapper Ceviche and Mussels Chorizo with Mango Coconut Sauce, finished with Guava Cream Cheese Phyllo Tartlets.
102. CARNIVAL NIGHTS
Chef Irie reinterprets Trinidadian favorites with Cilantro Corn Soup, Chicken Pelau, Pineapple Pepper Slaw and an Irie-style Ginger Libation. Viewers listen in on a food conversation between Chef and Trinidadian Olympic athlete and Sports Analyst Ato Boldon.
103. A LITTLE OF THIS…
Chef Irie draws inspiration from Trinidad and Jamaica with Plantain Chips and Dip, Pan Grilled Jerk Pork Medallions, Sweet Mango Chutney and an Herb Apple Salad. Chef’s interaction with Trinidadian Olympic athlete and Sports Analyst Ato Boldon is concluded with a lesson in making an interpreted Trinidadian Bake and Shark.
104. DINNER IN THE KEYS
Chef Irie showcases his love of island gourmet with Shrimp Bisque, Spicy Steamed Fish Papillote and a Mango Key Lime Pie. Chef cooks and converses with the “Bad Boys” of reggae, Inner Circle.
105. RICH & REFRESHING
Chef Irie makes a lineup of non-traditional elements with his Coconut Pumpkin Rum Soup, Picadillo Meatballs, Chayote Salad, and cool Cucumber Lemonade. Viewers listen in on a food conversation between Chef and chart topping British Jamaican reggae singer Maxi Priest.
106. AN EARLY LUNCH
Chef Irie prepares a casual brunch menu: Jerk Turkey Pumpkin Frittata, Herb-Crusted Salmon with Green Papaya and Mango Slaw, and a decadent Passion Fruit Mousse. Chef’s interaction with chart topping British Jamaican reggae singer Maxi Priest is concluded with a lesson in making a vegetarian-friendly Lentil Salad.
107. KINGSTON TO BRIDGETOWN
Chef Irie mixes big island and small island traditions with his Escoveitched Flying Fish over Coucou, Kale Salad with Mango Vinaigrette and a delightful Rum Raisin Bread Pudding with Coconut Custard Sauce. Chef takes on a drink-making challenge at the home of Vincentian Soca King Kevin Lyttle.

Saw a recipe that was on taste the islands last night.It was a salad made of kale and mango.Would like to try this recipe
I saw an episode where Chef Irie was making Vegetarian Lentil Salad. I checked both websites and I cannot find the recipe. I would like to try this-is it possible to get the recipe?

Hi Tammy. Not sure which recipe you’re referring to. Jerk Chicken and curry are two separate recipes, both of which you can find on the site, but I don’t think we’ve seen jerk with curry. 🙁
