Trinidadian Beef Stew

This recipe is a literal melting pot of taste-tempting flavors.

This Trinidadian version of Stewed Beef is as unique as it is delicious. It reflects the multicultural nature of Caribbean cuisine, bringing together methods from using sugar to caramelize the meat, to use of Asian soy sauce.


INGREDIENTS

  • 2 lbs. stewing beef, cut into bite-size pieces
  • 2 tbsp. chopped shadon beni
  • 2 tbsp. chopped thyme leaves
  • 3 – 4 chive stems, chopped
  • 3 garlic cloves, chopped
  • 1 tsp. salt
  • ½ tsp. ground black pepper
  • Juice of 1 lime
  • 1 medium onion, chopped
  • 1 cup water
  • 3 tbsp. sugar
  • 3 tbsp. ketchup
  • 2 tbsp. soy sauce
  • 1 tbsp. butter
  • 2 tbsp. chopped fresh parsley

INSTRUCTIONS

  1. Place beef, herbs, garlic, salt, black pepper, and lime juice in a bowl and mix well to coat beef with seasoning.
  2. Refrigerate and let marinate for at least 1 hour or overnight.
  3. Add sugar to a large pot over medium heat and cook until melted and golden to dark brown in color.
  4. Add the seasoned beef and stir to coat well with the sugar.
  5. Add the onion, water, ketchup, soy sauce and all-purpose seasoning.
  6. Cook for 30 minutes or until meat is tender.
  7. Add the parsley and butter.
  8. Taste and adjust seasonings if desired.
  9. Let simmer for 5 more minutes and serve.
